I threw my pumpkin out today. I lift the cap for fun...only to find mold!!! Gross!!!
I'm glad I got a couple snapshots before it got all moldy.

It was called "Mourning." Now that I think about it, kind of depressing. I found it in my pumpkin carving toolkit.
I carved this on Halloween. The day after, I was over it. We're all about working with the pumpkin now! For sure, I'll be making pumpkin pie! CAN'T WAIT!
Of course, while carving the pumpkin, I couldn't waste it! I had the urge to do something with the insides...so I decided to roast the pumpkin seeds.
- 2 teaspoons melted butter
- A generous dash of salt
- Any optional spices such as garlic powder, cayenne pepper, cajun seasoning!
Preheat oven to 300F.
Mix melted butter and salt with about 1.5 cup of pumpkin seeds.
Add any spices.
Spread pumpkin seeds in a single layer onto a baking sheet.
Bake for about 45 minutes stirring occasionally.
Voila! Great snack!
Confession: I didn't put any additional spices, and it didn't taste very great. I wish I had tried cinnamon and sugar!
